I’ve long loved the look of cauliflower - the crisp white of the ‘curd’ against the green, veined leaves. And, in turns out, so do most of us. When cauliflower reaches its later stages of development, farmers usually start shielding it from sunlight to stop the curd getting a tint of yellow or green by tie-ing its biggest leaves together.
